Thanksgiving Pumpkin Tea Loaf

It was recently the Thanksgiving holiday in America. I usually celebrate by cooking a huge traditional meal for the family and friends but this year has been so busy time just flew by!

I had a Facebook message from a childhood friend in the town I grew up in, Walpole New Hampshire and she posted two pumpkin loaves she had made for the family day. I asked her for the recipe some time and within 5 minutes she had posted it on Facebook back to me.

It was early enough for me to check I had all the ingredients so I thought I would make it as my offering for Thanksgiving.

It made two 2lb loaves so I took one to work the following day which was gratefully received and we had the other one over the weekend.

Pumpkin Tea Loaf (makes 2 x 2lb loaves)

Ingredients:

Mix together
2 cups SR Flour (levelled)
½ tsp salt
½ tsp baking powder
1 tsp baking soda
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg

Beat together
2 cups castor sugar
1 ½ sticks unsalted butter (150g)
2 large eggs

Add
1 can pumpkin puree or 15oz steamed pumpkin puree

Add
Dry flour & spices

Optional: some pre-soaked raisins and/or handful of chopped nuts.

Bake in a preheated 180oC oven for 65-75 minutes
Cool 5 mins in tins then remove to cool completely.

  2. I thought it had a touch too much groundc cloves for me - next timer I will add half the amount. It was a really moist loaf though.

    1. Pumpkin pie is an acquired taste, something you just kind of grow up with in the states, this is a great loaf to have in the freezer for unexpected breakfast guests!
