Great British Bake Off - Batter Week with Rachels Organic Yogurt

If you have been watching the great British bake off you will know this week was batter week Rachel's organic yogurt have asked me to use their pancake recipe with yogurt as an ingredient. I have never put yogurt in my pancake batter before.

I followed the recipe that Rachel's organic yogurt sent me and I used their plain yogurt with vanilla in the batter. The batter was not any thicker then other batters I have made before without yogurt.
The waffles were cooked in my waffle maker and they came out perfectly as you can see.
I have topped them with Rachel's organic yogurt with coconut and fresh blueberries with a sprinkle of cinnamon. They tasted delicious and were the perfect brunch

Waffles with Blueberries & Greek Style Yogurt
Ingredients:-
250g self raising flour, sifted
Pinch of salt
2tbsp caster sugar
2 egg, separated
80g unsalted butter
200ml milk
180g Rachel’s Organic Low Fat Vanilla Yogurt
A few drops of vanilla extract

To Serve: Rachel’s Greek Style Honey Yogurt Berries of your choice

Makes: 8 waffles serves 4 Preparation time: 10 minutes Cooking time: 20 minutes

Method:-
1.Mix the flour with the salt and caster sugar in a bowl.
2.Add the egg yolk, melted butter, milk and yogurt and vanilla extract and beat to a smooth batter.
3.Whisk the egg white until stiff and then fold into the batter.
4.Heat the waffle iron until very hot and pour enough batter to cover the surface.
5.Close the waffle iron and cook for a couple of minutes each side. When cooked the waffle should be golden brown, crisp and easily removed from the iron.
6.Serve with fresh (I used blueberries) berries and a large serving of Rachel’s Greek Style honey (I used coconut) yogurt.

Foxcroft & Ginger - Restaurant Review

When I first worked in London I would walk along Berwick Street in Soho to get my fruit and vegetables from the market. This market had been there for many years, with one side of the street a colleciton of cafes and Asian incence shops whilst the other side of the street was shop after shop of wholesale fabric, furry, shiny leathers, airy organza and much more.

The fabric shops are disappearing and in their place little eateries such as Foxcroft & Ginger.
My friend Val and I entered the shop front which was small and intimate and we were asked to go down stairs. The downstairs wasn't much bigger and was sparsley set out. 
The menu had a lovely selection of Brunch such as Eggs Benedict, French Toast as well as Herb Roasted Mushrooms and Lunch items such as Spiced Moroccan Chicken Salad with Chickpea, Roasted Pepper, butternutsquash and Tahini Yoghurt Dressing or Slow Roasted Pork, Leek Gratin, Mature Cheddar and Pickled Red Jalapeno on Sourdough plus loads more just as innovative and interesting.

We were given menus but told that the only thing they had that evening was the pizzas!

We both had a hot drink, I expressed admiration for the design on my coffee -
I had the sourdough pizza with Garlic & Fennel Sausage, Red Pepper, ricotta and Burnt Onion.
Val had the Goats Cheese, Fig, Kale Pesto & Marinated Beetroot with Marscapone.
A selection of the cakes for us to share. At this point though we were really full but couldn't resist!
A few bags of Shipton Mill flour for all that artisan baking and pizza dough they have planned!
Next time you are walking around Soho in London and find yourself on Berwick Street, don't walk past the tiny entrance of Foxcroft & Ginger but step inside for a lovely treat.

Breakfast at Kippings

Breakfast at Kippings, maybe a nice film title? Or a great restaurant?

I was invited to Kippings Bistro & Wine bar in Wheathampstead a couple of miles from where I live in St Albans.  They have been open about 6 months now and even though I have driven past loads of times it never occurred to me to stop by.
 
 
I am however, very glad I did today. Mr R and I were up early and weeding on the allotment and brunch was our reward .
 

We were greeted by Patricia and introduced to her husband Barry and head chef Jack. They were all welcoming and very hospitable.

The decor is modern and uncluttered and the inside is small enough to be intimate but large enough not to feel claustrophobic.

 
 
 
There is a well stocked bar and a 'library' area which makes a lovely meeting place for coffee with friends, a quiet coffee and newspaper or magazine or just to catch up on tweets!

or sit outside in the little sun garden with a cool drink.
 
 

Mr R and I both had the full English breakfast, I had my eggs scrambled and he had sunny side up. We both remarked that our eggs were perfectly cooked, the bacon thick and tender (not dry or overcooked) and the sausage and black pudding tasty.


 
 

Mr R is the king of brunch mushrooms but he certainly has a rival and chef Jack may steal the title!!
 
 
The toast was served on a piece of wood with more than enough butter (often you have to try to make a small amount reach both pieces of toast) and was unsalted with a few flakes of crunch sea salt sprinkled on top.
 

The coffee was lovely and smooth without any bitter taste which always pleases me.

We weren't rushed and were made to feel very welcome. Looking at the Menu board I think I will be back for dinner very soon!
