Great British Bake Off - Batter Week with Rachels Organic Yogurt

If you have been watching the great British bake off you will know this week was batter week Rachel's organic yogurt have asked me to use their pancake recipe with yogurt as an ingredient. I have never put yogurt in my pancake batter before.

I followed the recipe that Rachel's organic yogurt sent me and I used their plain yogurt with vanilla in the batter. The batter was not any thicker then other batters I have made before without yogurt.
The waffles were cooked in my waffle maker and they came out perfectly as you can see.
I have topped them with Rachel's organic yogurt with coconut and fresh blueberries with a sprinkle of cinnamon. They tasted delicious and were the perfect brunch

Rachel's has launched a brand new page to link to the local farmers that help make all of the organic produce that goes into Rachel's Organic products. You can find out all about the farmers' page here.

British Berry Bonanza - Thanks Tesco

There is no memory like picking wild fruit as a child and my mother making jam that afternoon. Every year when I buy fresh berries at the peak of their ripeness that memory comes flooding back and last night I was invited to Tesco's Hatfield store to an evening of berries, strawberry, blueberry, raspberry and blackberries. A virtual berry bonanza!

We were welcomed with a drink of fizz and chatted to each other and some Tesco staff before being seated and introduced to Tesco's world of berries.

A fascinating talk about how Tesco sources the berries we find on their shelves and the different types of each berry.  For instance each berry is on their shelves within 24 hours of picking to ensure we can buy them at their peak.

Berries are judged by aroma, texture and taste and appearance.  The strawberries (of which there are 35 varieties in the UK) are sorted into three categories; Finest (as in selection A) Everyday Value and Standard (as in selection C).  There is even a Berry Technologist in the company to make sure we get the best fruit!

We were tasting the three categories on their own and also with different toppings such as single cream, sugar, icing sugar, clotted cream (my favourite!), as well as unusual tastes like black pepper and balsamic vinegar! All providing a different taste experience.

My daughter Caroline, also a blogger attended the event with me as did smallest grandson but he slept through the whole thing!

And if all those berries wasn't enough to make our day there was a Summer Berry Tart with Lemon Cream made up for us to try and it was absolutely delicious (glad to say our goodie bag contained all we need to make this recipe up at home). You can make this lovely summery pudding too by clicking on the above link.

And for the future? Look out for some new berries due in our shops this year; Mac Black Raspberry, Kiwi Berries and Aronia Berries (great for jam).

Thanks Tesco for a berry lovely evening, a great goodie bag and gift card. All the photos, opinions and thoughts are my own.

Jordan Country Crisp Super Berry

Jordans have been flour millers for over 150 years and in 1972 brothers Bill and David Jordan began making cereals from their mill in Biggleswade in Bedfordshire and one of my favourites has always been Original Crunchy and now Country Crisp.

All their products are grown on a nature friendly Conservation Grade (TM) British farms which ensures that bees, birds and butterflies can survive. Jordans are also ensuring that British farms and rural communities have a sustainable future.

Recently I was sent a box of their new Country Crisp Super Berry (RRP £2.69 for 500g box) to try.  Mr R does like his cereals for breakfast so I had to be quick to have some for my breakfast the other morning!

It is really nice enjoying your breakfast and knowing it is healthy and cares for the countryside too.

When you pour the milk on your bowl of Country Crisp Super Berry it is a hard decision whether to eat immediately whilst the clusters are really crisp or wait a few minutes for the fruit to re-hydrate and become soft.  Today I went for the latter option and waited till the milk went light blue and the berries were soft but I was delighted to see that the clusters were still crunchy!

You know what this means? I will have to get earlier than Mr R to make sure I can have some of this luscious cereal for my breakfast tomorrow!

Quick Snack

I got the munchies this afternoon and fancied a quick snack.  Looking in the cupboard I came across an almost finished jar of honey we bought in Suffolk so I added that to some Total Greek Yogurt (www.totalgreekyoghurt.com) and a punnet of blueberries and yum yum ready to eat heaven!
