The students at Westminster Catering College near Victoria Station in London worked with Parmigiano Reggiano to create recipes using this well known cheese. The students took part to create a recipe that would make it into the new Parmigiano Reggiano cookbook and I was invited to the book launch.
The book has some great and easy recipes all using Parmigiano Reggiano to make risotto, appetisers, sauces and more all with the original and only parmesan cheese.
There are around 430 small dairies that form the Consorzio del Formaggio Parmigiano Reggiano and they alone are allowed to put the PDO (Protected Denomination of Origin) on the cheese and any packaging as well. If you don't see the logo then it isn't the real deal!
Throughout the event we were served Prosecco and canapes which were all featured in the new book.
Parmesan from Parmigiano Reggiano is truly versatile and can be served on it's own as shavings as part of an antipasto plate or used as a topping or a vital ingredient such as souffles, rissottos, soups and pastas.
The new cookbook has loads of great family recipes for Parmigiano Reggiano parmesan and I have a copy to give away.
